Guignolet is the popular name for a liqueur made from guignes which is said to originate from Anjou1. It is also subsequently produced in eastern France2[insufficient source]. This name is rooted in “guigne”, one of the species of cherries used in its preparation. Morello cherry and marasque can also be included in the manufacturing recipe which depends on each manufacturer. The maceration of the cherries gives an alcoholic juice which will be sweet in order to neutralize the natural acidity of the fruits.
